Sweet Corn, D’Orsogna 100% Natural Premium Double Smoked Sliced Ham and Chilli Fritters with Avocado Salsa
- 100gm D’Orsogna 100% Natural Premium Double Smoked Sliced ham, diced
- 2 cobs sweet corn
- 2 eggs
- 100gm plain flour
- 1 red chilli diced
- 1 spring onion, finely chopped
- 1 tsp ground cumin
- 1 avocado, diced
- 20ml lemon juice
- 2 tbs chopped coriander
- 1 clove garlic, crushed
- salt and pepper
- Cut the kernels from the cobs of corn and blanch in salted boiling water for 3 minutes. Drain and cool.
- Mix the cooked corn with the D’Orsogna 100% Natural Premium Double Smoked Sliced Ham, spring onion, chilli, cumin, flour, eggs, salt and pepper until well combined.
- Fry tablespoon amounts of the corn fritter mix in hot oil until crisp and golden.
- Drain on absorbent paper.
- Mix together the avocado, lemon juice, garlic, and coriander, and season with salt and pepper.
- Place a heaped teaspoon of avocado salsa on each corn fritter and serve while warm.
