Cooked Eggplant

Eggplant can be a wonderful ingredient to use if you know how; the thing to remember is that they will absorb as much oil as you give them, so the way I like to cook them is to spray slices on both sides with a small amount of olive oil spray, lay them out on a tray and season them with salt and pepper. Bake the slices in a hot oven(200°C) for about 10 minutes or until tender and golden.

(Alternatively you can grill the sprayed slices in a hot grill pan.)

From here, you can toss them through a salad, pickle them and serve them on an antipasto platter, or serve them as an accompaniment to meats such as lamb and chicken.
