There is sometimes nothing as precious as time, especially when we are run off our feet! Lunch is such an important meal to keep us fuelled for what the afternoon brings us, so this yummy coleslaw is perfect for a quick and healthy lunch for 2.
Simply mix together 2 cups of finely shredded wombok (chinese cabbage), 1 cup grated carrot, ½ a finely sliced red onion, and 100gm shredded D’Orsogna Deli Fresh Premium Ham.
Dress with 50ml white wine vinegar whisked with 1tsp Dijon mustard and 75ml extra virgin olive oil, salt and pepper.
Toss into a lunchbox for later or into a small bowl to devour on the run!
